well I look at it this way; Jedi are more defensive and are worried about preservation. Sith are more full on frontal combat with alot of power.

In the end Episode 3 Anakin had Obi-Wan on the defensive alot because of the fact that Anakin was just tapping into pure rage and anger. Luke tapped into the dark side and used his rage and hatred to cut off Vaders hand.
