Skateboarding was when it first came out, of course - Plus look at the way you could dress up the skaters in "cool popular clothing," the music was a huge part of it too....And of course because of that it sold huge....So then they keep making the games to get the cash...Nowadays it isn't as popular, but thats the way it goes.
Notice how as soon as Bam Margera, CKY, Jackass etc became huge, they threw him in the next game asap....He hadn't been in any of the previous games...And as rap grew more popular they added more of it in the soundtrack....

Def Jam is a huge rap label, like the first one ever, from the early 80s.
The games (I think there are 2 or 3 now) are basically wrestling games where the characters are all popular rappers.

Now the basic trend I see in all these games is that they are all originally designed for consoles....Also because of the simplicity of a console in comparison to a PC, you get a younger demographic involved too...This is the market for these games...
